Although, until you check the bit, it is in an undefined state. (Not exactly a value, I know).

Can't we just have the options Yes/No/Maybe.

You have to wait for quantum computers to become consumer objects for that. Then every bit can have several states at the same time:

yes/no/maybe/both/neithernor/whatever

The very basics of a bit come from two simple electric states: the (electircal) current is flowing or it's not. There's no third state where it's undefined if the current is flowing through the transistor.

With hard drives every bit is a (simply speaking) "steel needle" that is magnetized and points either north or south, is either 1 or 0. There's no "west" or "east" direction for the needle.
